The Pickled Brisket is Bristol’s only salt beef bar. Our multi-award winning sandwiches have been a regular on the Bristol street food scene for the past few years. We are now open at Cargo 2 at Wapping Wharf.

Our Food

We cure beef for two weeks, slow cook it for twelve hours and serve it on bread from a local family bakery. We even have our own mustard produced here in Bristol by Gingerbeard’s Preserves. Each sandwich is carved to order to provide a hot salt beef sandwich that would be fit to grace the plate of any New York deli. We serve a variety of different hot salt beef treats including our famous Reuben with blow torched Swiss Cheese. We also do a veggie version, breadless boxes and smoked salmon from The Valley Smokehouse.

Grilled Cheese

We have added to our already popular salt beef menu – a classic comfort food; grilled cheese. We’ve always loved a good grilled cheese sandwich, enjoying it at London’s Borough Market, at our street food friends’ stall, For Mice & Men plus as a staple afternoon snack at home with our family. We wanted to create a grilled cheese menu with a difference at our container at Wapping Wharf.

The benefits of having premises at Wapping Wharf include the sense of community and having so many excellent local independent suppliers and producers on our doorstop. To help reflect this we are now offering a grilled cheese option using ingredients from our foodie neighbours including sourdough rye from Assembly Bakery, cheese from The Bristol Cheesemonger and finished with a glaze of Ostler’s cloudy cider vinegar sourced from Better Food.

You can build your own cheese feast with sauces of your choice (house Russian dressing, Gingerbeard’s Preserves mustard and chipotle ketchup) plus various toppings including pickles and ferments (jalapenos, red cabbage, cucumbers and sauerkraut), Rosie from the Bristol Cheesemonger’s guest cheese and of course – our signature salt beef.
